Some alternatives
As an alternative to seitan, slices of wheat muscle can be used. For those who are intolerant to gluten, we recommend replacing vegetable (gluten-based) meat with compact tofu.- Cut the seitan into 1 cm thick slices.
- Prepare the macera by mixing the juice of one lemon with soy sauce, veg white wine, mustard, pepper and sage. Dip the slices of seitan in the maceration and leave to rest for at least two hours.

The longer the seitan slices are left in the macera, the tastier the result!- Drain the slices from the maceration and pass them in the wholemeal flour.
- Pour two tablespoons of oil into a pan and, when hot, brown the slices of seitan on both sides, until browned. When the slices are golden, add the macera, cover with the lid and leave to flavor for about ten minutes.
- Turn off the heat and serve the seitan escalopes with a side of potatoes or mixed salad.
