So today I would like to offer you a "recovery" recipe to avoid throwing away the food (it would be a real shame!): In addition to cakes, you can prepare fabulous gnocchi with stale bread! Ingrediants
For the gnocchi
- 300 g of stale bread
- About 80 g of breadcrumbs
- About 100 g of white flour type 00
- 30 g of grated Parmesan cheese
- 200 ml of water
- 1 grated nutmeg
- Q.b. of pepper
- Q.b. of salt
- 1 pinch of baking soda
- A few basil leaves
- 1 sprig of parsley
- A few stalks of chives
For the sauce
- 1 clove of garlic
- Q.b. of pepper
- Q.b. of salt
- 2 tablespoons of extra virgin olive oil
- 400 g of tomato sauce
- 20 g of grated Parmesan cheese

Preparation
- First, devote yourself to the preparation of the sauce. Heat a saucepan, add a drizzle of oil and flavor with a clove of garlic. Pour the tomato puree, season with salt and pepper. Leave to cook for half an hour.
- Meanwhile, cut the stale bread into small cubes, removing the crust if necessary.
- Combine the bread cubes in a bowl.
- Heat the milk and water, then add the liquids slowly in the bread bowl until a soft consistency is obtained. Leave to rest so that the bread becomes soft.

- Squeeze the bread to remove any excess milk, and combine it in another bowl.
