Materials Needed
- 1 bowl
- 2 wooden spoons
- Large saucepan for boiling water
- Pan with lid for the sauce
- 1 grater for the nutmeg

Preparation
- First, prepare the sauce: pour the tomato puree into a saucepan, season with salt, pepper, a drop of oil and chopped basil. Boil over low heat for 5 minutes.
- In the meantime, prepare the dough for the dumplings. In a large bowl, pour the ricotta, the spreadable cheese and the parmesan. Mix well with a wooden spoon.
- Season the cream cheese with a pinch of flavored salt and ½ grated nutmeg.
Alternative to flavored salt
Alternatively, you can use simple cooking salt and flavor the cream with a mix of spices to taste. However, the flavored salt gives a special flavor to the dumplings.- Mix everything with an egg.
- Finally, add the right amount of breadcrumbs (about 120 g), until you reach the desired consistency.
- With your hands, get many cylinders, then cut them with a knife forming fairly regular pieces.
- Form many balls and dip them into boiling salted water. Wait for them to come to the surface (it takes about a couple of minutes), then flavor them with the tomato sauce.
- Serve piping hot with a sprinkling of parmesan cheese.
