Today we will have fun making a very fast pizza, so fast that I called it “Speedy Gonzales pizza”! The dough does not require leavening and cooking does not require an oven! Interesting right? Give me 15 minutes: I'll make you a pizza in the blink of an eye!

Ingrediants
For 2 pizzas
- 320 g of white flour type 00
- 180 ml of water
- 10 g of instant yeast
- 2 tablespoons of extra virgin olive oil
- 7 g of salt
- 5 g of sugar
For the filling
- 100 g of tomato puree
- 100 g of mozzarella
- 1 teaspoon of oregano

Preparation
- In a bowl, sift the white 00 flour together with the instant yeast.Add the sugar, salt and mix the dry ingredients.
- Add the lukewarm water and oil slowly. Mix all the ingredients, working the dough with your hands for a few minutes until you get a soft and velvety dough.
- Divide the dough into two parts and roll out each ball with a rolling pin, until it forms a thin disk.

For an even cooking of the pasta, it is advisable to roll out the disc rather thin.- Heat a pan on the stove, closing it with the lid: this will create a uniform heat that will simulate that of the home oven.
- When the pan is hot, place a disc of pasta on it, lower the heat and cover with the lid. Cook for 2-3 minutes on each side, taking care not to burn the pasta.
- After 5-6 minutes, remove the lid and stuff the disc with a thin layer of tomato sauce and slices of mozzarella. Cover again with the lid and cook for 8-10 minutes, maintaining a gentle flame.
