Today I would like to pay homage to a well-known song by Pupo, preparing with you the chocolate ice cream, a delicacy so loved by young and old. By inquiring on the internet and in my books, I discovered a way to obtain a phenomenal ice cream, which has nothing to envy to those of ice cream parlors. In fact, we will add the cocoa cream with two very special ingredients:
- Inulin: soluble fiber capable of making ice cream creamier, giving body and structure. Inulin allows to reduce the lipid quantity without giving up the creaminess rendered by the fats
- Aglumix®: it is a special powder that acts as a stabilizer / thickener for ice cream, composed of mono-diglycerides of fatty acids, carob gum and guar gum. Added to the cream, Aglumix® gives the ice cream a warmer and less icy sensation, preventing the formation of crystals in the mass.

Ingrediants
- (Optional) 6 g of Aglumix
- 80 g of bitter cocoa
- (Optional) 10 g of inulin
- 250 ml of whole milk or semi-skimmed milk
- 500 ml of vegetable cream or fresh cream
- 60 g (1 medium) of eggs
- 100 g of sugar
Materials Needed
- Ice cream maker
- Casserole
- Whip
- Sieve for cocoa
- Large jug or container
- Ladles of various sizes
- Cups
Preparation
- First, prepare the base for the ice cream: pour the milk, sugar and an egg on a saucepan. Heat the mixture over low heat, continuing to mix with a whisk. When the mixture has reached a consistency similar to that of an English cream, also add the sifted bitter cocoa, taking care to stir constantly to avoid the formation of lumps.
- Remove the saucepan from the heat and continue stirring for another two minutes to mix everything. Allow the cream to cool to room temperature, then place it in the refrigerator to cool completely.
- Once cooled, add the vegetable cream (or fresh cream), inulin and Aglumix® and mix thoroughly.
- Pour the cream into the ice cream maker and let the ice cream mix for 15-30 minutes, until it reaches the desired consistency.
Did you know that
To prepare this ice cream we used a type of ice cream maker that requires the container to be pre-frozen. Clearly, there are also other types of ice cream makers on the market, more professional (but with a much higher cost) that allow you to prepare ice cream without having to pre-freeze the container.
Those who do not have an ice cream maker can still make ice cream by pouring the preparation into a large tray with low edges: this container will then be left in the freezer for 2-3 hours, taking care to mix and scrape the surface every 15 minutes to facilitate homogeneous freezing.- Turn off the ice cream maker and distribute the ice cream in individual bowls.

Creamy and irresistible, the chocolate ice cream is ready to leave your guests speechless. I'm sorry not to follow Pupo's song to the letter, but my ice cream is sweet, creamy, delicious and certainly not salty!

Chocolate ice cream is a real spoon dessert. The relative nutritional content is not the highest but, by virtue of the intake of saturated fats, cholesterol and simple sugars, it would be advisable that the respective consumption portions do not exceed 80-100g (120-150kcal).
