Preparation
- First, boil the brown Ribe rice and Venus rice separately in unsalted water for about 40 minutes, or until the grains are soft. It is advisable to check the recommended times in the package.
What is Venus rice?
Venere rice is a hybrid brown rice, obtained by crossing it with other varieties of rice. The taste vaguely recalls that of freshly baked bread and, to the eye, looks like a black-purple rice.- Drain the two types of rice and collect them in two separate bowls.
- Prepare the black rice dressing. In a bowl, combine two tablespoons of extra virgin olive oil, a pinch of salt, some chopped rocket and the juice of half an orange. Emulsify vigorously, then pour ¾ of the sauce over the Venere rice.
- Prepare the dressing for the brown ribe rice. In a bowl, combine two tablespoons of extra virgin olive oil, a pinch of salt and a few drops of lemon juice. Emulsify vigorously, then pour ¾ of the sauce over the wholemeal Ribe rice.
- Prepare the composition. In a bowl, season the rocket with the remaining sauces (orange and lemon). Arrange the rocket in the center of a plate.
- Cut an orange on the edge, then cut it horizontally into thin slices. Arrange the orange slices neatly on top of the rocket. In the center of the composition, place a bowl of pasta with a diameter of 10 cm and fill it with white rice and black rice. trying to make the figure of the tao (Chinese symbol).
- Remove the pastry rings and serve decorating with turmeric powder.
