- A few stalks of chives
- 30 g (1 small piece) of ginger
- q.s. of salt
- 1 sprig of parsley
- q.s. of pepper
- 100 g of light or yogurt mayonnaise
- 100 g of pickled vegetables
- 50 g of bean sprouts
- 150 g of slices of Fontina cheese
- 150 g of carrots
To serve
- 120 g (2 medium) of hard-boiled eggs
- A few gentle salad leaves

Preparation
- Wash the carrots, peel them and remove the ends. Grate the carrots with the peeled ginger and arrange the vegetables in a bowl.
- Reduce the Giardiniera into small pieces and mix it with the carrots and ginger. Add the bean sprouts and season with salt and pepper.
- Mix the vegetables with the mayonnaise by adding the chopped parsley.

Preparing mayonnaise at home is very simple: pour one egg yolk into a beaker together with 100 ml of seed oil. Add a pinch of salt, a teaspoon of mustard and a drop of lemon. Blend everything with the immersion blender until you get the desired consistency. Keep in the fridge at least one hour before serving.- Now make cheese croissants, simply by rolling the slices of fontina on themselves. Solder the croissants with a stem of chives (or with a ring of leek). Fill the cheese croissants with the mayonnaise vegetables.
- Serve the cheese croissants with the hard-boiled eggs cut into wedges.
