Preparation
- Dissolve the brewer's yeast in warm water, adding a teaspoon of sugar, which is important for activating the yeast and facilitating fermentation.
- Sift the Manitoba flour into a large bowl, along with the rye flour. Pour the yeast dissolved in the softened water, then gradually add the warm milk, yogurt, extra virgin olive oil and salt. Also add the sesame and poppy seeds, setting aside a handful for coverage.
Alternatives
As an alternative to rye flour, simple wholemeal flour can be used.
You can also replace poppy and / or sesame seeds with other seeds, such as pumpkin seeds or sunflower seeds.- Work all the ingredients for a long time, first with a wooden spoon, then by hand, until you get a very smooth and elastic ball of dough. If necessary, add more flour.
- Transfer the dough to a bowl, cover with a sheet of cling film (or with a damp cloth) and let it rise for a couple of hours.
- Work the dough again and make 6 balls of approximately the same size.
- Work each single ball with your hands, until you get 6 cords.
- Roll each string on itself as if it were a rose and transfer each sandwich to a baking sheet lined with wax paper, taking care to maintain a certain distance between one rose and another.
- Brush the surface of the rolls with plain water, then cover with the sesame and poppy seeds kept aside.
- Place the plate in the oven off (but with the light on) or in another warm place: let it rest for about 30 minutes, until the roses have "blossomed".
- Preheat the oven to 190 ° C, then bake the sandwiches for about 15-20 minutes, until the surface is colorful and inviting.
- Allow to cool and serve.
