Considering the different needs of some athletes and people who follow a low-fat, high-protein diet, I have I thought of offering you a recipe that can satisfy these needs, and that is both practical and fast, so I would like to prepare protein pancakes with you.

In this recipe we used isolated pea proteins, with good biological value and high digestibility. They have a complete amino acid profile and are suitable for people with lactose intolerances or allergies. Alternatively, soy protein can be used.
Egg whites are a food widely consumed by athletes because they are rich in protein and almost devoid of fat.
Compared to wheat flour, oat flour is richer in terms of protein and fiber.
Banana and apple juice are used in this recipe as natural sweeteners.- Heat a pan and lightly grease it with a little oil.
- With a spoon, take a part of the batter and pour it on the hot pan, forming discs.
- Cook the pancakes for 3-4 minutes over medium heat, turning them often with the spatula to avoid burning them. For even cooking, it is recommended to cover the pan with the lid. With these doses, about 8-10 pancakes are obtained.
- Serve the pancakes hot, accompanied by maple syrup.
