Ingrediants
- 1 Kg of apples
- 80 g of white flour of type 00
- 60 g of sugar
- 120 g (2 medium) of eggs
- 8 g of baking powder
- 100 ml of milk
- Untreated lemon juice and zest
- 1 pinch of salt

Preparation
- Start preparing the Ferrara cake by washing the apples thoroughly. Peel them, remove the core and cut them into thin slices.
- Sprinkle the apples with the juice of half a lemon to avoid turning them black.
- Prepare the dough: shell the eggs and divide the yolks from the whites. Work the yolks with the sugar, flavoring with lemon zest. Add the milk, flour, salt and yeast: mix to obtain a creamy mixture.
- Beat the egg whites until stiff, adding the juice of half a lemon. Incorporate the mass of egg whites into the mixture, taking care to mix from top to bottom to avoid removing the cream.
Some alternative ideas
Those who wish can enrich the dough with cinnamon and raisins.
Apples can be replaced with pears.
- Pour the mixture onto a 20 cm diameter hinged pan, then fit the apple slices in it, neatly, to obtain a crown.
- Place in the oven and bake at 180 ° C (mode: static) for 45 minutes.
- Remove from the oven, cut into slices and serve the tender apple pie warm.
