Apple pie today! Yes, but not a “classic” apple pie rich in butter, cream and eggs! In this dessert we will not use animal fats of any kind, nor eggs. In fact, we will use a lot of apples and make a sort of thick batter with wholemeal flour, vegetable milk and a little oil, which we will then brown in the oven!

For the dough
- About 200 g of wholemeal flour
- 200 ml or 1 glass of soy milk
- Half a sachet of baking powder
- Untreated lemon juice and zest
- 900 g (3 large) of apples
- 160 ml or 1 small glass of corn oil
- 100 g of sultanas
- 80 g of brown sugar
To sprinkle
- About 20 g of cane sugar

Preparation
- Soak the raisins in a small bowl filled with hot water.
- Peel the apples, cut them into small pieces and pour them into a large bowl.
- Wash the lemon (choose an organic lemon) and grate the zest in the bowl of apples. Cut the lemon and squeeze the juice of one half on the apples: the lemon, in addition to flavoring, is important to prevent the oxidation of the apples.
- In the same bowl combine the brown sugar, the soy milk (discover the recipe for homemade soy milk), the corn oil and the raisins and well drained from the soaking water.
- Mix everything well and add the wholemeal flour and the sifted yeast a little at a time until you get a creamy but not too compact mixture.

- Place the cake in a preheated oven (180 ° C) and bake for 40-45 minutes.
