- Drain the raisins from the soaking water.

Stevia sweetener and erythritol: what is it?
Stevia (Stevia rebudiana) is a perennial plant that has always been appreciated for its extraordinary sweetening properties. Not surprisingly, stevia is also baptized with the name of "sweet herb or honey herb": in fact, its leaves are very rich in glucosidic components (eg stevioside) with a sweetening power that sometimes exceeds the sweetness of 300 times of sucrose. It also has hypoglycemic properties and can be defined as an acaryogenic substance.
Erythritol is an innovative sweetener belonging to the category of polyols. It is a substance naturally present in fruit and fermented foods (but it is also produced industrially by bacterial fermentation of sugars) and has a glycemic index equal to zero. Furthermore, this particular sweetener provides only 0.2 Kcal / g and has a sweetening power of about 70% compared to classic sugar.
Both sweeteners are heat stable and do not caramelize in cooking!
1 g of this sweetening powder is able to provide the same sweetness provided by 2 g of sucrose, with a calorie saving of almost 100%!- Sift the yeast and add it to the rest of the ingredients.
- Add the egg, seed oil and milk, then mix all the ingredients to form a batter.
Who is allergic to eggs
It is possible to replicate the dessert by avoiding using eggs. In this case, it is recommended to use 60 g of plain yogurt.
For the vegan version, it is possible to replace the egg with 60 g of soy yogurt and the milk with the same amount of vegetable milk to taste.- Line a 22 cm side square pan with parchment paper. Pour the mixture into the pan.
- Peel the remaining apple and cut it into thin slices. Wedge the apple slices on the surface of the dough, finish with a teaspoon of sweetener and a teaspoon of corn flour (for gratinating).
- Bake the cake at 200 ° C for about 40 minutes, or until the surface is golden.
- Remove the cake from the oven, allow to cool, cut into slices and serve.
