Ingrediants
- 550 gr of fresh ricotta
- 3 of eggs
- 120 grams of brown sugar
- 100 gr of sultanas
- 100 gr of rice flour
- untreated lemon juice and zest
To garnish
- (red fruits) just enough of jam
Materials Needed

- Baking paper
- Hinged pan with a diameter of 18 cm
Preparation
- In a bowl, collect the eggs together with the sugar: work the mixture into a cream for 5 minutes, until it is fluffy and soft.
- Meanwhile, soften the raisins in a small bowl with warm water for 5 minutes.
- At this point, pour the ricotta inside the egg cream, a little at a time, to prevent the mixture from untying.
- Flavor the ricotta and egg cream with lemon juice and zest, and vanilla essence.
- Drain the raisins, squeeze them from soaking and roll them in rice flour before adding them to the dough.
