To prepare this recipe we used a specific mix of gluten-free flours. However, those who cannot find this mixture can mix different starches (eg starch, cornstarch, rice flour).- In a bowl, sift the gluten-free flour mix and add the sugar, vanilla and sifted baking powder.
- Soften the butter in the microwave and add it to the center of the flour. Then add the egg yolks and milk, mixing carefully with your hands. However, since it is a shortcrust pastry, it is not recommended to knead the dough for too long.
- Wrap the dough in cling film and let it rest for 30 minutes.
- Meanwhile, grease and flour (with gluten-free flour) a tart mold with a diameter of 28 cm.
- Remove the film from the dough and roll it out with a rolling pin to a thickness of 5-6 mm.
- Line the mold with the dough.
Attention!
Gluten-free pasta is quite fragile and tends to break. For this reason, it is advisable, if necessary, to spread the dough on a sheet of baking paper, to facilitate its shape in the mold.- Fill the tart with the apricot jam.
- Peel the apples and cut them into thin slices. Decorate the tart with a crown of apple slices.
- Brush the apples with melted butter and sprinkle with sugar.
- If you have some shortcrust pastry left over, you can embellish the surface of the cake with pastry decorations.
- Bake the gluten-free tart in a hot, preheated oven at 160 ° C for 45 minutes.
