Preparation
- Pour the skimmed milk into a saucepan and bring to the stove.
- In a bowl, mix the egg with the stevia until frothy.
- Dissolve the chocolate-flavored protein powders in hot milk, then add the guar gum and mix with a whisk or immersion mixer.
- Combine the egg and stevia mixture into the milk. Continuing to mix, heat until it reaches 80 ° C: the protein custard will appear thick and velvety.

In this recipe we have reduced fats and sugars, to the advantage of proteins. Rubber is the ingredient that replaces starch, the classic thickener commonly used in making custard.
The stevia used in this recipe sweetens three times compared to traditional sugar; it can be replaced with sweetener in drops or with erythritol.
Skimmed milk, on the other hand, can be replaced with a vegetable drink of your choice.
We used chocolate-flavored whey protein, but other types of protein powders can be used.
It is important to avoid boiling the custard and to monitor the temperature: in this version the use of starch is not foreseen, therefore - exceeding 80 ° C - the eggs would begin to coagulate, compromising the result.
