"Nothing is thrown away in the kitchen": this has now become a commandment in my kitchen! I just made some delicious prawns in a pan, and for the recipe I wanted to completely shell these crustaceans. Many juices are concentrated in the head and in the carapace, so I thought of using them for the preparation of a cartoon, also called shrimp bisque: it will be the ideal base for flavoring fish-based dishes!

- 200 g of shrimp scraps
- 500 ml of water
- Homemade food: 1 tablespoon of vegetable cube
- 100 g of cherry tomatoes
- 1 sprig of parsley
- A few basil leaves
- A few stalks of chives
- 2 tablespoons of extra virgin olive oil

For this recipe we used scraps of prawns (carapace and head). However, it is possible to replicate the recipe with scraps of other crustaceans, such as lobster and scampi.
To prepare a fish broth, you can also use fish scraps such as bones and head of sea bass, sea bream, turbot, croaker etc. The broth must always be filtered before being used as a base for other preparations.- Shell the shrimp and remove the carapace, head and legs. The pulp can be used for the preparation of other recipes (eg shrimp cocktail, pan-fried prawns, paella, etc.).
- Clean and wash the cherry tomatoes, then cut them into small pieces.
- Pour a drop of oil into a saucepan and combine the shrimp scraps and cherry tomatoes. Brown the scraps for a few minutes.
- Pour the water over the waste and allow it to boil again. Add a tablespoon of homemade vegetable cube (alternatively, use plain salt). Cover with the lid and cook over low heat for one hour.
- After one hour, the broth will have reduced and taken on a reddish color.
- Filter the shrimp fumet and flavor with a finely chopped parsley, chives and basil. The cartoon can be used as a base for all fish dishes.
- It can be kept in the fridge for a couple of days or in the freezer for 2 months.
