Ingrediants
- 100 g of white flour of type 00
- 150 g of fresh ricotta
- 4 tablespoons of extra virgin olive oil
- 160 g (4 medium) of egg white
- 60 g (3 medium) of egg yolks
- 100 ml of milk
- 50 g of grated Parmesan cheese
- Q.b. of pepper
- 5 g of salt
- 3 g of instant yeast
- Steamed food: 250 g of spinach

Preparation
- First, devote yourself to cleaning the spinach. Once washed, steam the spinach, let it cool and squeeze it to remove excess liquid.
- Weigh 250 g of spinach and combine them in the glass of a blender with the salt, pepper, egg yolks and milk. Blend everything until you get a cream.

In this recipe we suggest preparing the flan in an alternative way. Normally, flans do not require the use of flour or yeast: to make the dough firmer and more compact, we suggest instead adding about 100 g of flour and a pinch of yeast for savory pies.- Preheat the oven to 160 ° C.
- In a bowl, sift the white flour, add the instant yeast for pies and the grated Parmesan cheese. Add the spinach cream, the oil and about 100 g of fresh ricotta, then mix until you get a batter.
- Beat the egg whites until stiff and slowly mix them with the spinach mixture.
- Place the silicone mold inside a large baking dish. Place a few tomatoes and a few sprigs of ricotta on the base of the mold, then fill with the mixture obtained.
- Prepare the container for the water bath. Pour about 500 ml of hot water into the largest pan, making sure that the level of liquid reaches at least ¾ of the height of the fir-shaped mold.
- Place the pan in a preheated oven at 160 ° C and cook in a bain-marie for about 30 minutes.
- Remove from the mold immediately, gently turn over and serve.
