Preparation
- Soften the raisins in warm water and leave them to soak for about ten minutes.
- Prepare the pancake batter. In a bowl, sift the white flour and add the sugar. Flavor the powder with orange and lemon zest.
- Blend the candied fruit to obtain a mince.
- Drain the raisins from soaking.
- Separately, squeeze the juice of an orange, then add the juice to the flour, adding an egg, milk, a pinch of salt, baking powder, softened raisins, chopped limes and half a glass of liqueur. pleasure (eg aniseed liqueur).
The egg-free alternative
As an alternative to eggs, you can use 60 g of plain or fruit yogurt.
White flour can be replaced with wholemeal flour, and white sugar can give way to cane sugar.- Wash the apples, remove the core and cut them horizontally, so that the slices have a central hole.
- Pour the peanut oil into a saucepan and heat it, taking care not to exceed the smoke point: the use of a food thermometer is recommended.

- Cook the pancakes for 2 minutes per side: during cooking, it is advisable to turn the pancake with the help of tongs or a fork.
- When the apple fritters appear colorful, remove them from the boiling oil and place them on a sheet of absorbent paper. Proceed in this way until you run out of ingredients.
