It has now become a tradition in my home: every year, in the first days of December, I start kneading all kinds of biscuits, which I then keep in tin boxes. I'm ticking the list of Christmas cookies [I show a list with the names of cookies] and today I will prepare the canestrelli, obviously revisited in the lighter version: we will try to reduce the amount of butter by over 50%!

Ingrediants
For 25-30 cookies
- 1-2 tablespoons of milk
- 1 sachet of vanillin
- 1 pinch of salt
- 50 g of hazelnuts
- 70 g of butter
- 50 g of powdered sugar
- 1 yolk (20 g) of hard-boiled eggs
- 100 g of potato starch
- 100 g of white flour of type 00
To serve
- Q.b. of powdered sugar

Preparation
- First, firm the egg. Fill a tall, narrow saucepan with cold water, immerse the egg and bring to a boil. Calculate 10 minutes from boiling, then turn off the heat and let the hard-boiled egg cool in cold water and ice.
- Meanwhile, sift the white flour, potato starch (potato starch) and icing sugar.
- Add a pinch of salt and vanilla.
- Cut the butter into small pieces and soften them gently in the microwave.
- Finely blend the hazelnuts to form a flour.

Hazelnuts are the "surprise" ingredient of canestrelli. In fact, not all recipes provide for its use. Hazelnuts are useful for reducing the amount of butter: in this variant, in fact, the amount of butter is significantly lower than in the traditional version.- Add hazelnuts and butter to the dough.
- Shell the egg, remove the egg white and sift the yolk through a sieve. Add the hard-boiled yolk to the other ingredients and mix everything with your hands, adding one or two tablespoons of milk: you will have to obtain a compact and velvety mixture.
- Wrap the dough in cling film and let it rest for 15 minutes.
- Preheat the oven to 180 ° C.
- Flour the pastry board and roll out the dough to a thickness of 1 cm. With a flower-shaped mold (diameter: 4 cm) make the cookies and place them on a plate lined with baking paper. With a 1 cm diameter round stencil, make a ring in the center of each flower.
The right idea
Those who do not have a 1 cm diameter round mold can engrave each basket with the handle of a wooden spoon!- Make 30-35 canestrelli and bake them in the oven for 10-12 minutes: the biscuits are ready when they begin to brown slightly along the edges.
- Then remove the plate from the oven, allow to cool and sprinkle with icing sugar.
- Store in tin containers for 3 weeks.

Canestrelli Biscuits with Little Butter are sweet foods with a high calorie content.
