I love to convey emotions with food, combining different colors and scents. And with today's recipe I would like to communicate joy and affection to the person to whom I dedicate it: the mother. Today is his party, so I decided to prepare a themed menu, starting with an unusual and colorful aperitif, which smells of spring: cheese pralines with roses and pistachios.

For 20-22 balls
- 250 g of goat cheese
- 50 g of green olives
- 1 sprig of parsley
- Untreated lemon zest
- Q.b. of salt
- 1 tablespoon of pink pepper
- 20 g of sesame seeds

- 50 g of pistachios
- A few rose petals

Preparation
- Shell the pistachios and chop them coarsely with a knife.
- Chop the green olives and set aside.
- Make a mince with parsley (or other aromatic herbs).
- Combine the goat cheese in a bowl. Flavor with lemon zest, pink pepper berries, olives and sesame seeds. Season with salt. Add a tablespoon of chopped pistachios.
- Mix all the ingredients to form a cream.
- Leave the cream to rest in the freezer for 5 minutes.

It is recommended to use non-chemically treated rose petals! Before using them, the petals must be gently detached from the flowers, cleaned of any impurities with a damp cloth and possibly cut into strips with a ceramic knife.- With two teaspoons, take a portion of the cream and roll it in your hands to obtain balls.
- Roll the balls in the chopped pistachios and rose petals.
- Place each ball in a small paper cup.
- Leave the balls to rest in the fridge for at least one hour before serving.
