Note:
Proteins: cow's milk is deprived of caseins, separated by precipitation, and added with whey proteins, in particular isolated alpha-lactalbumin.
Fats: the percentage of polyunsaturated fatty acids is increased by previously degreasing the cow's milk (skimming) and then adding it with vegetable oils. In particular, olive or corn oil is used; soybean and peanut oils are absolutely forbidden as they are potential allergenic agents.
EPA and DHA can also be added. It is important that the saturated / monounsaturated / polyunsaturated ratio respects the ratio 45:40:15
