E551 SILICON DIOXIDE
Silicon dioxide (SiO2) n is an amorphous substance which is produced synthetically by a process of hydrolysis in the vapor phase, which gives pyrogenic silica, or by a wet process which gives precipitated silica, silica gel or hydrated silica. Pyrogenic silica is produced essentially in an anhydrous state, while the products of the wet process are obtained as hydrates or contain surface absorbed water.
Silicon dioxide is an additive that has several functions: anti-caking agent, support for aromas, dyes and synthetic processing aid (anti-foaming agent, also used to remove proteins and yeasts during the production of wine and beer).
Silicon dioxide can be used in various foods, such as soups in bags, table salt, vanilla, garlic powder, chewing gum and certain types of white rice.
At the moment this additive is considered harmless to human health.
