Well, surely the sausages that I am about to offer you, do not hurt, indeed they will be a faithful ally of our line! I'm talking about vegetable sausages, easy to prepare, tasty and irresistible. Let's see how soy sausages are prepared.

Ingrediants
For 4 sausages
- 250 g of tofu
- 1 clove of garlic
- Q.b. of pepper
- Q.b. of curry
- Q.b. of chilli
- Q.b. of sweet paprika
- Ready product (boiled): 60 g of beetroot
- 1 teaspoon of tomato paste
- 1 tablespoon of red wine
- 1 teaspoon of mustard
- About 50 g of potato starch
- 100 g of boiled beans or 60 g of dried beans
- q.s. of salt
Materials Needed

Preparation
- Boil the white beans in water. Drain them, let them cool and add salt to taste. As an alternative to beans, you can use chickpeas, soy or other legumes to taste.
- Cut the tofu into cubes and combine it in the blender with the beans.
- Now add the mustard paste and the spices: paprika, chilli, curry, garlic powder (or fresh) and pepper. Add the sliced boiled beetroot, tomato paste and organic red wine.
- Blend everything until you get a sticky paste. Pour the mixture into a bowl and add enough potato starch to obtain a hand-moldable consistency.

Instead of potato starch, different flours such as pea flour, cornstarch or organic potato flakes can be used.
Red wine, spices and garlic are characteristic ingredients of traditional sausages and will add an extra touch to vegetable sausages.
Tomato paste and beetroot, on the other hand, are useful for giving vegetable sausages the classic reddish color of animal meat.- Bring a saucepan full of water to boil.
- Divide the dough into 4 parts. Prepare 4 sheets of cling film and distribute a part of the mixture in the center of each square. Wrap the sausage and seal the ends by folding the film several times.
- Dip the vegetable sausages (with the plastic wrap) in the boiling water and cook for about 15 minutes.
- Remove the sausages from the water and unroll them from the film: the sausages can be eaten immediately or, for a more delicious version, brown in a pan with a drizzle of extra virgin olive oil.
- Vegetable sausages (wrapped in plastic wrap) can be stored in the refrigerator for 4 days. For longer storage, they can be frozen before boiling in water.
