Ingrediants
- 600 g of sbrise or champignon mushrooms or chiodini or pioppini mushrooms
- 1 teaspoon of garlic powder
- 1 sprig of parsley
- Q.b. of pepper
- 1 pinch of salt
- 40 g of grated Parmesan cheese
- 150 g of breadcrumbs
- 50 g of white flour of type 00
- 70 ml of milk
- 120 g (2 medium) of eggs
- 2 tablespoons of extra virgin olive oil

Preparation
- Clean the mushrooms (sbrise) with a brush, gently, taking care not to break or damage them. It is not necessary to remove the skin covering the sbrise.

It is not necessary to wash the mushrooms because they would fill up with water and would be mushy.
If the stems are too large, they can be removed and cut into strips.
If the mushrooms are dirty, wipe them with a wet paper towel.- In a bowl, shell the eggs, add the milk, season with salt, pepper, flavor with parsley and garlic.
- In another bowl, mix the breadcrumbs with the grated Parmesan cheese.
- Roll the sbrise on the flour, then soak in the egg and milk solution, then roll in the breadcrumbs. Repeat the step: soak the sbrise in the egg, then again in the breadcrumbs.
- Arrange the mushroom cutlets on the plate lined with baking paper, drizzle with a drop of oil and bake at 180 ° C (mode: ventilated) for 15-20 minutes or until golden brown.
- Remove from the oven and serve the very hot mushroom cutlets.
