Preparation
- Peel the potatoes and cut them into strips with a mandolin or a knife.

To avoid browning and curling the potatoes, it is advisable to gradually dip them into a bowl with cold water.- Bring a saucepan to the boil and add salt to taste. Blanch the potato slices for 3 minutes, starting from the moment of boiling.
- When the potatoes appear soft, drain them with a slotted spoon, taking care not to break them.
- Line a baking sheet with parchment paper and make a thin layer with the potato slices.
- Wash the cherry tomatoes, cut them into slices and arrange them on top of the potatoes.
- Preheat the oven to 200 ° C.
- Now devote yourself to cleaning the fish: cut the belly of the fish and remove the entrails. Wash the sea bass and dry it gently.

Remove the lemon zest (only the yellow part!) And add it to the other aromatic herbs.
- Place the fish on top of the potatoes and season with salt. Season the potatoes with oregano and grind some pepper.

It is not necessary to overdo it with salt! Sea bass, being a sea fish, is already tasty enough!- Spread 2 tablespoons of oil over the fish and potatoes.
- Place the pan in the oven and bake at 200 ° C for 20-25 minutes. If necessary, stir the potatoes gently during cooking.
- Fillet the sea bass and serve with potatoes and cherry tomatoes.
