To make this recipe, we used frozen cod fillets. A couple of hours before starting the recipe, we recommend that you slowly defrost the fish in the refrigerator: in this way, the cod fillets will require very quick cooking.- Preheat the oven to 200 ° C (ventilated).
- Arrange the defrosted cod fillets on a plate lined with baking paper.
- With a brush, spread a tablespoon of oil on the surface of the fillets. Season with salt and pepper.
- In a bowl, collect the breadcrumbs, add salt, pepper, garlic powder and parsley. Mix the mixture with a tablespoon of extra virgin olive oil, a splash of white wine, the juice of half a lemon and flavor with the lemon zest. With your hands, mix the flavored breadcrumbs until you get a crumbly mixture.
- Spread the mixture of crumbs on the surface of the fish fillets and bake immediately: cook at 200 ° C (ventilated) for about 15 minutes, or until golden brown.
