Preparation
- Transfer the boiled legumes to the container of a blender. Add a teaspoon of sweet paprika, a drizzle of oil and season with salt and pepper.
- Season with a spoonful of grated vegan cheese.
Alternatives
In this recipe we used chickpeas and white beans. However, it is also possible to make vegan cutlets with other legumes, such as: lentils, black beans, peas, soy, etc.
The vegan grated cheese can instead be replaced with gomasio or with a spoonful of tahini sauce.- Add the organic potato flakes and blend by adding just enough soy milk to obtain a soft but workable dough.
- Divide the dough into three parts. Crush each ball with your hands until you get an irregular disk with a thickness of a couple of centimeters.
- Crumble the corn flakes on a plate.
- Press the veg-schnitzel over the corn flake crumbs until both sides are completely covered.
- Preheat the oven to 180 ° C.
- Arrange the cutlets on a plate lined with baking paper. Pour a drop of oil on the surface of each vegetable cutlet and cook at 180 ° C for 15-20 minutes, until golden brown.
- Serve the veg-cutlets with a vegetable side dish.
