What do you say, let's try to approach the raw food diet? I thought of a beautiful, elegant and very fragrant recipe, in full oriental style: raw food sushi. The most important ingredient in sushi is rice, which, however, as it is not allowed in the “raw food” diet, I decided to replace it with another ingredient. Discover with me my idea of raw food futomaki!

Ingrediants
For 10 morsels
- 1 sheet of nori seaweed
- 10 g of hemp seeds
- 50 g of coppery tomatoes
- 20 g of peppers
- 5 g of rocket
- Q.b. of pepper
- Q.b. of salt
- Raw food: 2 tablespoons of extra virgin olive oil
- 170 g of cauliflower
- 20 g of celery
Materials Needed
- Chopping board
- Sharp knife
- Mixer
- Vegetable peeler
- Little mat
Preparation
- Clean the cauliflower: remove the outer leaves and the ribs, cut the flowering inflorescences and rinse them in running water.
- Gather the buds in the container of a mixer and blend everything until you get a grainy consistency, similar to couscous.
- Combine the chopped cauliflower in a bowl and season with a drizzle of oil, salt and pepper.
- Clean the rocket, rinse it in water and drain it.
- Clean the peppers: cut them into layers, remove the stalk, seeds and internal filaments. Cut the flaps into strips.
- Wash the tomato, remove the stalk and cut it into slices. From the slices, make sticks as regular as possible.
- Place the sheet of nori seaweed on a cutting board, on top of the special sushi mat, taking care to turn the shiny part of the seaweed upwards. Fill the entire surface with the chopped cauliflower and sprinkle with hulled hemp seeds.
- In the center, in a strip of cauliflower, arrange the rocket, celery and the tomato and pepper sticks.

The filling can be customized according to your tastes. For example, you can use poppy seeds, sesame seeds, avocado strips, courgette strips, carrot strips and much more!- Wrap the seaweed from the long side, with the help of the mat. During rolling, it is advisable to push the filling towards the inside of the seaweed to facilitate the procedure.
- Arrange the raw futomaki roll on a cutting board. Moisten the blade of a knife and cut the roll into slices 1-1.5 cm thick.
- Serve the raw vegan sushi or refrigerate for 1 day.

Futomaki-Sushi Raw Vegan is a single dish with little energy and without ingredients of animal origin. Calories should be provided mainly by lipids, while the portion of carbohydrates (simple) and proteins (medium-low biological value) would seem less relevant. Fatty acids should be predominantly unsaturated, cholesterol absent and fiber abundant.
