Preparation
- Peel the potatoes and, using a mandolin, cut them into very thin slices.
- Dip the thin potato slices in cold water, rinse and dry them.
- Grease a pan with a diameter of 28 cm with two tablespoons of extra virgin olive oil, then turn on the flame.
- Arrange the potato slices on the pan, taking care to slightly overlap them as the base is formed. Create two layers of potatoes. Cover with the lid and cook the potatoes for 5 minutes, taking care not to mix them and to maintain a medium flame.

For an excellent result, it is advisable to cut the potatoes into very thin strips and to slightly overlap them on the edges: in this way, during cooking, the starch present in the potatoes will act as a glue due to the presence of the starch, thus creating a layer compact.- After 5 minutes, open the lid, season with salt and pepper, stuff with a few tablespoons of tomato sauce or puree, mozzarella and oregano.
- Cover the pan with the lid again and cook for another 5 minutes, lowering the heat.
- Turn off the heat and slide the fake potato pizza onto a plate. Cut into wedges and serve immediately.
