When it comes to "freshness" what comes to mind? Ice, ice cream, soft drinks, water: all foods that, in summer, help us to overcome moments of heat in the heat! And, in my opinion, nothing better than mint also gives a touch of balsamic freshness to all those foods that we love to consume during the months of the sun. For this I would like to prepare with you a mint syrup, an exquisite sweet base to be diluted in water and to prepare ice creams and sorbets. Let's find out what we need and how it can be best preserved.

Ingrediants
Ingredients for about 250 ml of syrup
- 200 ml of water
- Optional: a few drops of chlorophyll
- half a cup of untreated lemon juice
- About 25 g of mint leaves
- 300 g of sugar
Materials Needed
- Mixer
- Casserole
- Glass bottles
- Funnel
- Wooden ladles or spoons
- Colander
- Gauze or strong absorbent paper
- Pot for sterilization
Preparation
- Carefully wash the mint leaves (which must not be treated with pesticides!) In a solution of water and sodium bicarbonate, ideal for breaking down the microbial load.
- Dry the mint leaves and blend them with about 100 g of sugar, until you get a thick paste.
- Pour the mint and sugar paste into a saucepan, add the lemon, the water and the remaining sugar: bring to the boil and cook, stirring constantly, for a few minutes.
Why add lemon juice?
Lemon is rich in citric acid, a powerful antioxidant capable of preserving the vibrant color of mint.- Filter the liquid obtained first through a simple sieve, to remove the largest particles, then through a sterile gauze or a strong absorbent paper to remove even the finest particles.
- Those who want to obtain a brilliant color can add a few drops of natural dye, such as chlorophyll.
- Sterilize the glass bottles by leaving them in the microwave for 4-10 minutes. Fill the bottles with the mint syrup and close them with the respective caps, previously sterilized (it is advisable to boil them for 10 minutes in water).
- Place the bottles in a saucepan filled with cold water. Bring to a boil for 15 minutes, then turn off the heat and let the bottle cool in the same liquid: in this way, it is possible to ensure correct sterilization, therefore an "excellent conservation of the" food.
- To prepare an excellent mint drink, it is advisable to dilute 1 part of mint syrup in 15 parts of water.
