Today we will prepare a dessert that will make us sing with the angels: the Paradiso cake! Well, if we consider the original recipe (with over 250 g of butter, 300 g of sugar and 8 eggs) maybe, we really end up in heaven! To avoid this "inconvenience" I took the liberty of modifying the traditional recipe to drastically reduce calories, fats and sugars. Discover with me the yogurt version of the paradise cake!

Ingrediants
- 150 g of white flour of type 00
- 150 g of potato starch
- 170 g of yogurt
- 140 g of powdered sugar
- A few drops of vanilla essence
- 240 g (4 yolks and 4 egg whites) of eggs
- 1 pinch of salt
- 90 g of butter
- 16 g of baking powder

Preparation
- In a bowl, whip the butter at room temperature with the icing sugar and flavor with a few drops of vanilla essence. Work it all for 5 minutes.
- Meanwhile, shell the eggs and divide the yolks from the whites.
- Add one yolk to the buttercream at a time, taking care to add the next one only after the first one is completely absorbed.
- At this point, add the yogurt and, in spoonfuls, the potato starch, the white flour and the baking powder: you will have to obtain a thick, creamy and compact mixture.
The original recipe
As mentioned, in this recipe we have changed the doses compared to the classic Paradise Cake. Instead of the 250-300 g of butter we used only 90 g, compensating with 170 g of yogurt (not present in the classic formula). The number of eggs is also reduced compared to the original. The sugar has been reduced by more than half (140 g against 300 g), while the doses of flour and starch have been maintained. The result is still optimal.- Preheat the oven to 160 ° C.
- Line a 24 cm diameter springform pan with parchment paper.
- Beat the egg whites until stiff, adding a pinch of salt.
- Incorporate the egg whites into the mixture, taking care to add them a few at a time and always mix from top to bottom to avoid letting the mixture collapse.
- Transfer the dough to the pan, level gently by swirling the container. Bake the cake at 160 ° C for 40 minutes.
- Remove from the oven, allow to cool and serve, finishing with icing sugar.

It has a rather significant caloric intake, provided above all by carbohydrates, followed by lipids and finally by proteins.
