For the biscuit cake
- Untreated lemon juice and zest
- 80 g of sugar
- 50 g of butter
- 50 g of yogurt
- 60 g of eggs
- 200 g of white flour of type 00
- 50 g of frumina
- 1 teaspoon of baking powder
- 1 pinch of salt
- Q.b. of powdered sugar
To decorate
- 5 g of sultanas

Preparation
- First, prepare the lemon biscuit dough. Sift the white flour together with the wheat starch. Combine the sugar and butter at room temperature: work the mixture with your hands until you get a sandy consistency.
- Flavor with plenty of lemon zest, add a pinch of salt, baking powder and work the mixture with an egg and yogurt, adding the lemon juice: you will get a stick with a velvety consistency.
- Work the dough to obtain many balls of various sizes: some as large as an apricot, others as walnuts. Roll the cookies in icing sugar and mash the balls with your hands to flatten the cookies.
- Leaving a little space between one piece and the other, arrange the large biscuits next to the smaller ones on the baking paper and form the image of a lamb: one ball will represent the nose, one ball the tail and the others the mantle. To make the figure realistic, build two paws by engraving the 2 balls chosen for this purpose with the knife, apply a piece of raisins in the ball of the nose to represent the eye. With this mixture, about two lambs of 15-20 balls each are obtained.
The alternative idea
If you like the idea of representing a lamb with sweets, you can think of replacing the biscuits with pan brioches, which you can then fill with chocolate or jam.
- Place the biscuits in the oven and bake at 160 ° C (mode: ventilated) for about 15 minutes.
- Remove from the oven and leave to cool. The lamb-shaped biscuit cake is ready: you can add more icing sugar, to be sprinkled on the lamb's mantle.
