Ingrediants
- 350 g of chicken breast
- 50 g of almonds
- 1 piece of ginger
- 2 tablespoons of extra virgin olive oil
- 2 tablespoons of soy sauce
- 20 g of cornstarch
- About 100 ml of vegetable broth or water
- A few drops of almond flavor
- 1 teaspoon of honey
Materials Needed
- Chopping board
- Knife
- Pan with lid or wok
- Grater
Preparation
- Cut the chicken breast into cubes or into strips.
- Peel the ginger and grate a piece.
- Heat a couple of tablespoons of extra virgin olive oil and flavor with grated ginger.
- Flour the chicken strips in corn starch (or rice starch) and brown them over a high flame for a couple of minutes, turning them often with the spatula.

The ideal would be to cook the chicken with almonds in the wok, the typical oriental pan in which spring rolls are also cooked. The wok can however be replaced with a non-stick or stone pan.- Deglaze with water or vegetable broth, add the soy sauce, lower the heat and continue cooking for another 10 minutes.
- Meanwhile, toast the sliced almonds in a pan, without adding oil or butter, taking care not to burn them. To put aside.
- A few minutes before turning off the heat, add the honey and the sliced almonds. Turn off the heat and flavor the chicken with a few drops of almond essence.
- Serve the steaming chicken with almonds, perhaps accompanying with basmati rice.
