- 80 ml of milk

Preparation
- First prepare the leavening. Dissolve the brewer's yeast in the warmed milk. Sift the flour into a bowl and mix it with the sugar. Pour the dissolved yeast into the flour and sugar mixture, then mix thoroughly to avoid the formation of lumps.
- Cover with a sheet of cling film and let the leavening rest in a warm place (e.g. oven off) for at least 30 minutes.
- After the necessary time, proceed with the preparation of the main dough. Sift the Manitoba flour and add the two egg yolks, soft butter, warm milk, a pinch of fine salt and sugar in the center. Flavor the mixture with the grated zest of an organic lemon. Then add the leaven (which in the meantime will have swollen) and mix vigorously, first with a wooden spoon, then by hand, until you get a soft and smooth dough.

Don't throw away the egg whites! We will need the donuts for the next phase!- Place the dough in a bowl, cover with cling film and let it rest in a warm environment for 2 hours or until the dough has tripled its volume.
- Arrange the leavened dough on the pastry board and roll out the dough with a rolling pin to form a rectangle (or circle) with a thickness of 6-7 mm.
- Line 2 baking plates with the special greaseproof paper.
- With a round cookie cutter with a diameter of 7 cm, cut out many discs (about 20-24). Place half of the discs obtained (10-12) on the oven plates, maintaining a certain distance between one and the other.
- Fill each disc with a teaspoon of apricot jam and brush the exposed edges with lightly beaten egg white. Cover the stuffed base with another disk of dough, pressing lightly along the edges to facilitate adhesion.

- Preheat the oven to 180 ° C and bake the donuts for 13-15 minutes.
