Ingrediants
For the tiramisù
- 250 g of mascarpone
- 150 g of fresh cream
- 80 g of sugar
- 120 g (2 medium) of eggs
- 200 g of strawberries
- About 300 g of ladyfingers or Pavesini biscuits
- About 150 g of strawberry jam
For the wet
- About 100 ml of milk
- About 100 ml of strawberry juice

- Square pyrex pan
- Single serving bowls (optional)
- Spoons or watering can to wet the ladyfingers
- Strawberry cutting board and knives
- Spatula
Preparation
To prepare this tiramisu we used all homemade products: in fact, both the mascarpone and the strawberry jam were prepared previously. Of course, those who wish can make this dessert with ready-made mascarpone and jam.
- Shell the eggs (very fresh!) And divide the egg whites from the yolks. Pour the egg yolks and sugar into a bowl, then beat everything for a long time with the help of the electric whisk, until the mixture is frothy.
- Add the homemade mascarpone (or the one ready) and continue to mix with the mixer.
- Add the fresh whipped cream to the mascarpone cream: this little trick is important to make the cream softer and to reduce (even if slightly) the total calories.
- Whip the egg whites until stiff, possibly with the help of a pinch of salt. Add the egg whites to the mascarpone cream, mixing by hand, however, with the help of a spatula to avoid letting the mixture go limp. The cream is therefore ready.
- Prepare the syrup for the ladyfingers by mixing the milk and the strawberry juice: pour the mixture into a specific watering can for cakes or into a bowl.
- Prepare the strawberries, which will then be spread over the cream. After having washed and dried them well, remove the inedible parts and cut them into small pieces. Leave the strawberries to macerate in a bowl with a spoonful of sugar.
- Pour a spoonful of mascarpone cream into the baking dish and arrange a first layer of ladyfingers neatly: the base cream will act as a "glue" and the biscuits will remain stuck, ready to support the mascarpone cream.
- At this point, soften the ladyfingers with the milk and juice syrup, then spread a light layer of strawberry jam. To facilitate its preparation, it is advisable to heat the jam in the microwave or on the stove for a few moments.
- Cover the softened ladyfingers with a few tablespoons of mascarpone cream, finishing with a few pieces of strawberry.

To prepare this tiramisu it is preferable to use the Pavesini-type biscuits ladyfingers because, in my opinion, they are ideal for supporting a mascarpone cream enriched with strawberries and strawberry jam.- Cover the cream and strawberries with another layer of ladyfingers and proceed in layers (in order: wet with milk and juice, strawberry jam, mascarpone cream, pieces of fresh strawberries and more ladyfingers etc.) until all the ingrediants.
- Leave everything to rest in the refrigerator for at least a couple of hours before serving.
If there is a bit of cream left over
