Preparation
- Gather the wakame seaweed in a bowl and cover with cold water to make it rehydrate: 5 minutes is enough.
- Meanwhile, also soak the dry daikon in cold water for 5 minutes.
- Squeeze the algae and the daikon from the soaking water and combine the ingredients in the blender glass.
- Add the hemp seed tofu, boiled chickpeas, yeast flakes, a tablespoon of oil and season with salt and pepper.

Chickpeas can also be replaced with other cooked legumes, such as soy, beans, broad beans or peas.- Check the consistency of the mixture: if it is too soft, add as much breadcrumbs as required, until the desired creaminess is reached.
- Preheat the oven to 180 ° C.
- Take a spoonful of the mixture and roll it in the sesame seeds. Crush the dough between your hands to form croquettes: 10-12 croquettes will be obtained.
- Gradually place the croquettes on a baking sheet, finish with a couple of tablespoons of oil and cook at 180 ° C for 15 minutes or until golden brown.
- Serve the croquettes still very hot, with mustard sauce or vegan mayonnaise.
