Whoever eats well on the first of the year will be healthy all year round. Let's say that I changed the well-known proverb of the beginning of the year a little: do we want to inaugurate 2015 well or not? Since many of us (myself included) are born gluttons, I have decided that the first recipe of the year will be a sweet. A healthy, wholemeal, organic, cholesterol-free and antioxidant-rich sweet treat: I propose you the vegan pancakes!

For the sweet tooth
Those who wish can add a teaspoon of unsweetened cocoa powder to the mixture: in this case, it is advisable to increase the quantity of cane sugar.- Mix all the dry ingredients. Then add the liquids: soy milk, sparkling water and corn oil.
- Mix all the ingredients to obtain a thick batter.
- Heat a pan and lightly grease it with a little oil.
- With a spoon, take a part of the batter and pour it on the hot pan, forming a disc with a diameter of 7-8 cm. Make 3-4 discs at a time, depending on the size of the pan.
- Cook the vegan pancakes for a couple of minutes on a moderate flame, turning them often with the spatula to avoid burning them.
- Serve the pancakes hot, accompanied by red fruits, chia seeds and maple syrup.
