For the biscuits
- 200 g of wholemeal flour
- 50 g of potato starch
- 20 g of bitter cocoa
- 130 ml of water
- 50 ml of corn oil
- 20 g of flax seeds
- 80 g of brown sugar
- 1 pinch of salt
- 3 g of baking powder
For the filling
- 100 ml of soy milk
- 75 g of raspberries
- 40 g of brown sugar
- 15 g of cornstarch

- Collect the flax seeds in a blender and grind them into a powder. Mix the flax seeds with half the water and leave to rest until you get a jelly.

Flax seeds are rich in mucilage: in contact with water they form a jelly-like batter that will help the dough to remain bound. Flaxseed jelly is used as an alternative to eggs.- In a bowl, collect the wholemeal flour, potato starch (or another starch of your choice, such as cornstarch), unsweetened cocoa powder, sugar, baking powder and salt: mix the dry ingredients, then add the corn oil, linseed jelly and the remaining water, just enough to obtain a workable and non-sticky dough.
- Wrap the pastry in plastic wrap and let it rest for half an hour.
- In the meantime, devote yourself to the preparation of the accompanying cream. In a saucepan, collect the soy drink, raspberries and brown sugar: bring to a boil and blend with the immersion blender. Filter the liquid obtained to remove the seeds of the raspberries, then add the corn starch and bring on the heat again until the cream thickens.
- Transfer the raspberry cream to a bowl, cover with cling film and allow to cool.
- At this point, roll out the pastry with a rolling pin to a thickness of 4-5 millimeters. With the star molds of various sizes, make the cookies and place them gradually on two trays lined with baking paper.

For an aesthetically very beautiful result, we recommend using at least 4 or 5 star shapes of different sizes: so the tree will be very beautiful to look at!- Bake the biscuits in a hot oven preheated to 160 ° C for about 15 minutes.
- Remove from the oven and leave to cool.
- At this point, create the 3D trees: stack 5 biscuits, from the largest (on the base) to the smallest (on the tip), and keep them attached by spreading a teaspoon of raspberry cream on each one. Finish with a fresh raspberry and, to taste, some icing sugar.

The filling with raspberries is just one example: clearly, the greediest can stuff the saplings with a chocolate cream; instead, if the creams are not to your liking, you can appreciate the biscuits just like that, without filling!

Biscuit Trees are foods that belong to the group of sweets.
It is a fairly energetic recipe, whose calories are mainly provided by carbohydrates, followed by proteins and finally by lipids. Carbohydrates are mainly complex, polyunsaturated fatty acids and peptides of medium biological value.
Fiber is very abundant while cholesterol is absent.
It does not contain foods rich in histamine but there is a histamine-liberating ingredient (cocoa).
It provides gluten but not lactose.
Biscuit Trees lend themselves to most nutritional regimes; however, in case of overweight, type 2 diabetes mellitus and hypertriglyceridemia it is advisable to reduce both the average portion and the frequency of consumption.
They are prohibited in the diet against celiac disease but not in that for lactose intolerance; they are also relevant (eliminating cocoa) in the diet against histamine intolerance.
The abundance of fiber could significantly increase bowel movement.
It is a recipe that respects the lacto-ovo vegetarian criteria and also the vegan ones.
