For the mousse
- 160 g of tofu
- 250 ml of soy milk
- 100 g of dark chocolate
- 6 g of agar agar
- 25 g of fructose

Preparation
- First prepare the water bath by adding a little water to a deep saucepan. Cover with a smaller pot and add the dark chocolate reduced to small pieces and a little soy milk to facilitate melting.

Those who do not particularly like to melt dark chocolate in a bain-marie can use the microwave oven, but be careful that the mixture does not burn. For this purpose, it is recommended to mix the mixture a couple of times, at intervals of about 30 seconds.- Meanwhile, pour the remaining soy milk into another saucepan until it reaches a temperature of 80 ° C. At this point, lower the heat and pour in the agar agar powder, stirring quickly with the whisk to prevent lumps from forming.
- When the dark chocolate has melted and perfectly blended with the soy milk, add the agar agar, which in the meantime has dissolved in the soy milk.
- Allow the mixture to cool slightly for a few minutes.
- Next, add the soft tofu (we recommend watching the homemade tofu video) and mix everything well with the whisk.
- Arrange the mousse obtained on ice cream cups or elegant glasses.
- Decorate as desired with lemon zest curls.
