Do you like fried eggs? Well, today we will prepare a trick recipe (perfect for April fish!): Playing with rice milk, apricots and starches we will prepare a fake egg. It will be fun to offer it as an alternative breakfast!

Ingrediants
For 3 puddings
- 300 ml of rice milk
- 30 g of rice flour
- 40 g of agave syrup
- Vanilla essence
- Food in syrup: 50 g (3 pieces) of apricots
- 200 g of pears
- 30 g of strawberry jam
Materials Needed
- Small saucepan
- Whip
- Scale weighs food
- Chopping board
- Knife
Preparation
- Pour 2/3 of the rice milk into a saucepan, add the agave syrup and flavor with a vanilla flavor.
- Dissolve the rice flour in the remaining vegetable milk, stirring with a whisk to remove all lumps.
- When the rice milk boils, add the diluted starch and, continuing to mix with the whisk, bring to a simulated boil until the consistency thickens.
- When the pudding is thick, proceed with shaping the fake egg: pour a ladle of pudding into a plate, to create the "egg white" effect.
- In the meantime that the pudding cools, prepare the fake chips: peel a pear and cut it into strips equal to that of the classic French fries.
- Place half an apricot in syrup in the center of each "egg white", taking care to place the cut part on the pudding: the orange fruit imitates the egg yolk.
Some alternatives
The pudding can also be prepared with almond milk or with any other type of milk, animal or vegetable.
Apricots in syrup can be replaced with peaches in syrup.
Again, the fake potato chips can be prepared by replacing the pears with strips of apples.- Accompany each rice pudding with the pear strips and with a small bowl of red fruit or strawberry jam, which will imitate ketchup!
