Ingrediants
For 5 Puddings
- 300 ml of milk
- 200 g of cooking cream
- 80 g of sugar
- 80 g of dark chocolate
- 30 g of bitter cocoa
- 6 g of isinglass
- Q.b. of vanilla essence
To decorate
- 250 g of fresh cream
- 10 g of bitter cocoa

Preparation
- First, soften the gelatin sheets in cold water.
- Meanwhile, chop the dark chocolate with the knife to obtain coarse pieces.
- In a saucepan, collect the cooking cream (or fresh cream), milk, pure vanilla, sugar and bring to the boil: dissolve the bitter cocoa powder and the dark chocolate. When the mixture starts to boil, turn off the heat and add the gelatine sheets, squeezed out of the soaking water: mix with a whisk to distribute the gelatin evenly.

If you don't want to use isinglass, you can use simple white flour: in this case, dissolve 40 g of white flour in cold milk, and bring to a boil. The pudding is ready when the mixture begins to thicken.
- Distribute the still liquid pudding in the bowls, then leave it to cool completely for at least a couple of hours, in the fridge, until it thickens.
- When the chocolate panna cotta is ready, remove it from the fridge. Decorate the bowls with fresh whipped cream and a sprinkling of unsweetened cocoa powder.

It is a very caloric food, whose energy is supplied mainly by lipids, followed by carbohydrates and finally by proteins.
Fatty acids are mainly saturated, simple carbohydrates and peptides of high biological value. Fibers are present and cholesterol is significant.
