And today I thought of all people who are lactose intolerant, allergic to eggs or who follow a vegan diet. So, I propose the infallible recipe of 100% vegetable custard, suitable for everyone (but absolutely everyone!).

Ingrediants
- 350 ml of rice milk
- 50 g of brown sugar
- 35 g of cornstarch
- Untreated lemon juice and zest
- 1 pinch of saffron or turmeric
Materials Needed
- Scale weighs food
- Small saucepan
- Whip
- Lemon grater or row
- Colander
Preparation
- Wash a lemon and remove a part of the zest, avoiding the white, bitter part.
- Pour the rice milk into a saucepan and pour in the corn starch. Mix with a whisk and flavor with the lemon zest: bring almost to a boil. Add the brown sugar and a pinch of turmeric (or saffron) .
Why spices?
This spice, in addition to giving a pleasant aroma to the cream, will give a touch of color that is very reminiscent of that of classic custard.- As soon as the vegetable milk starts to simmer, remove the lemon zest.
- Squeeze the lemon juice, filter it and add it directly to the cream.
- Mix well, cover with a sheet of transparent film in direct contact (to prevent the formation of a crust on the cream). Allow to cool and serve as desired.
