Ingrediants
For the donuts
- 1 sachet of vanillin
- 80 g of sultanas
- 120 g (2 medium) of eggs
- 300 g (about 2) of apples
- untreated lemon zest
- 12 g of baking powder
- 100 g of fructose
- 100 g of rice flour
- About 300 g of white flour type 00
- 50 g of lemon verbena
- juice and peel of untreated oranges
- q.s. (to soak the raisins) of water
To decorate
- a few tablespoons of jam
- q.s. of powdered sugar
Materials Needed
- Donut-shaped silicone molds (essential)
- Bowls
- Chopper for citrines
- Wooden spoons
- Ladles to measure out the dough of the donuts
- Core lever
- Knife
- Colander
- Juicer
- Grater for citrus peel
Preparation
- First, soak the raisins by dipping them in hot water for a few minutes.
- Chop the cedrini in the food processor, mixing them with a teaspoon of sugar to avoid forming a thick paste.
- In a large bowl, pour the eggs and beat them together with the fructose. Then add the grated rind of an orange and a lemon.
- Squeeze the juice of two oranges and filter it with a colander. Add the filtered orange juice to the egg fructose mixture.
- Add the vanilla, the raisins squeezed out of the water, the lemon verbena, the rice flour and the yeast. Mix well and gradually add the flour until you get a very thick cream.
Attention
The amount of flour depends on the amount of orange juice poured and the size of the eggs used- At this point, peel the apples and remove the core. Cut many thin slices of apple, about the size of the molds.
- With a ladle, pour a modest quantity of dough into each mold, then place a slice of apple and cover completely with the mixture.
The alternative OK
Instead of cutting the whole apple slices and adding them to the dough, it is possible to cut the apple into small pieces, then mix it well with the dough and pour directly into the special molds.- Bake in a hot oven for about 25-30 minutes.
- Allow to cool a little in the molds and decorate as desired with icing sugar and jam.
