Ingredients for 3 puddings
- 300 ml of skimmed milk
- 60 g of dark chocolate
- 30 g of rice flour
- half a glass of chocolate liqueur or rum
To decorate (optional)
- dark chocolate flakes

- Teaspoon
- 3 pudding molds
- Knife or peel vegetables for chocolate
Preparation
- Heat approximately 250 ml of skimmed milk in a saucepan. When the milk is hot, add the dark chocolate cut into pieces: mix with a wooden spoon to help it melt.
- Meanwhile, dissolve the rice flour in the remaining milk, and then add it to the saucepan only when the chocolate has melted completely.

It is advisable to maintain a moderate flame, rather sweet, to prevent the chocolate from sticking to the saucepan.- Add the rum to the milk pan (alternatively you can add half a glass of chocolate liqueur).
- Stir continuously with the whisk until the mixture has thickened.
- Wet the aluminum molds with a little water, then immediately fill them with the boiling pudding.
- Leave to cool in the refrigerator. Once cold, turn the container over onto a plate: the detachment will be very easy to perform and it is not necessary to heat the containers with hot water (as is usual to do to remove the panna cotta from the mold).
- Before serving, decorate with dark chocolate cut with a vegetable peeler or a sharp knife.
