Today is a national holiday for us Italians: it is the birthday of our Italy which, 68 years ago, was proclaimed a Republic! And like any self-respecting party, a sweet cannot be missing! So, after the preparation of the “Torta Italia” for April 25th, today I thought of offering you a tricolor pudding. Let's see the idea!

Ingrediants
For the Red base
- 100 g of ladyfingers
- 50 ml of milk
- 50 ml of Alchermes
For the mint pudding (Green layer)
- 500 ml of milk
- 70 ml of mint syrup
- 50 g of cornstarch
For the white chocolate pudding (White layer)
- 1 vial of vanilla flavoring
- 50 g of cornstarch
- 100 g of white chocolate
- 500 ml of milk
Materials Needed
- Casseroles
- Bowls of various sizes
- Whip
- Scale weighs food
- Pyrex dish (20 X 25 cm) or cups
Preparation
- Prepare the syrup for the ladyfingers. Mix the milk with the alchermes. Quickly soak the ladyfingers in the syrup, one at a time. Arrange the ladyfingers in the pan, one next to the other, possibly trimming the biscuits to fit them into the pan. In this way, we have created the red color of the Italian flag.
The right idea
As an alternative to ladyfingers, it is also possible to use sponge cake or another cake of your choice. In this case, the sponge cake must first be placed in the pan and then wet with the mixture of alchermes.- Prepare the white chocolate pudding. Pour a part of milk (about 400 ml) into the saucepan, flavor with a vial of vanilla flavoring and melt the coarsely chopped white chocolate in it. Meanwhile, mix the cold milk and remain with the corn starch (or rice starch). As soon as the milk with the white chocolate begins to boil, add the dissolved starch and continue mixing until the right consistency is reached.
- Pour the boiling pudding over the layer of ladyfingers. We have created the white color of the Italian flag.
- At this point, proceed with the preparation of the mint pudding, which will be the green color of the flag. Boil a part of milk (about 400 ml) with the mint syrup. Meanwhile, dissolve the cornstarch in the remaining cold milk. When the mint-flavored milk begins to boil, add the melted starch and mix: the pudding will thicken when it reaches a boil.
- Pour the mint pudding over the white chocolate pudding and level.
The right idea
As an alternative to the pan, it is possible to prepare 8 single portions of tricolor pudding: the "flag" effect will be even more spectacular!- Allow the tricolor pudding to cool completely, first at room temperature, then in the fridge.
- After 3 hours, the dessert (a sort of revisited English soup) can be served sliced or in a small cup.
