Browsing through my mom's cookbook, I found a very particular recipe, with her comment in which the words "EXCELLENT" were reported. These are very light wine biscuits, prepared without butter or eggs, but with flour, pine nuts, almonds, vanilla and wine! I will tell you that at first I was a bit skeptical about the result, but the flavor and lightness of these easy sweets won me over! Let's prepare them together!

Preparation
- In a pan, toast the almonds and pine nuts for a few minutes, taking care to stir often to avoid burning them.
- In the container of a pressure blender, combine the almonds, pine nuts and brown sugar: chop until you get an impalpable powder.
- Sift the flour and combine it in a bowl together with the chopped nuts and sugar. Add the vanilla flavor and salt, then mix everything with the oil and white wine, until you get a compact but smooth and soft paste.
- Wrap the dough in a sheet of cling film and let it rest for half an hour.
Some variations
As an alternative to white flour, you can choose other flours, such as whole wheat flour, spelled flour or kamut flour. Almonds and pine nuts can also be replaced with other dried fruit of your choice.
Those who want to get puffy biscuits can add a pinch of instant yeast to the dough.- Preheat the oven to 160 ° C (ventilated).
- Roll out the dough on a sheet of baking paper to a thickness of a few millimeters. With a cookie cutter with the shape of your choice, obtain the shapes and, with the cutouts, knead again to obtain other cookies.
- Gradually arrange the biscuits on the baking sheet lined with baking paper and bake at 160 ° C for 10-12 minutes, or until golden brown.
- Remove the biscuits from the oven, allow to cool and serve.
- Store the cookies in tin cans within two weeks.
Alice's comment - PersonalCooker
These cookies have a unique flavor! Maybe it doesn't look like it, but I invite you to try them at home: I am sure that you will all be conquered by their taste and no, the taste of the wine is not felt, if you are wondering, since the alcohol in it evaporates during cooking. !Nutritional values and Health Comment on the recipe
