- 350 g of zucchini

- 100 g of smoked salmon
- A few leaves of rocket

Preparation
- Wash the courgettes, trim them and cut them into julienne strips with a manual or electric grater.
- Collect the courgettes in a colander and add a teaspoon of fine salt: let it rest for about ten minutes to allow the salt to remove the vegetable water from the courgettes.
- Rinse the courgettes to remove excess salt, then squeeze them firmly to remove the water.
- Preheat the oven to 180 ° C (function: ventilated).
- Collect the dry courgettes in a bowl, add the eggs and mix. Add the salt, pepper, a tablespoon of parmesan cheese and the white flour.
