- For frying: 500 ml of peanut oil

Preparation
- Peel the plantains. Remove the ends of the fruits and cut them lengthwise with the tip of a knife, making several strips a couple of centimeters wide. Tear off the peel with the aid of a knife if necessary. Cut the pulp into 2 cm pieces.
- Pour plenty of peanut oil into a pan and heat until it reaches 160-170 ° C.
- Fry the chunks of plantain for 3-4 minutes, until they take on a fairly soft consistency: by introducing the fork, the pulp of the plantain must be soft.
The alternative to the oven
For a lighter version, the plantains can be cut to a very thin thickness with the help of a mandolin. The slices are then seasoned with salt, pepper and other aromas (optional), sprinkled with oil and placed on a baking sheet lined with baking paper. The chips are then cooked at high temperatures (200 ° C) for 10 minutes or until crunchy.- At this point, drain the pieces of plantain with a slotted spoon and place them between two sheets of parchment paper or absorbent paper. Mash the plantains with a meat mallet or with the bottom of a glass to obtain a thinner thickness.
- Dip the plantains into boiling oil again and finish frying for another 2 minutes: with this method you can get very crunchy plantain chips!
- Drain the chips and drain on absorbent paper. Season with salt (or roll in sugar) and consume immediately.
