The DPR 187/01 defines "durum wheat semolina pasta and durum wheat semolina pasta" the products obtained by drawing, rolling and consequent drying of doughs prepared respectively and exclusively with durum wheat semolina and semolina and water.
The only ingredients allowed for the production of pasta in Italy are therefore semolina (or semolina) and water, with the exception of special pasta (egg-based, stuffed, etc.); the addition of salt (sodium chloride) is also allowed up to a maximum of 4% on the dry product. It follows that the calories of the various types of pasta are rather uniform, regardless of the manufacturer, with fluctuations normally lower than 5% for pasta of the same category and size. For the most common pasta, the dry industrial one, we talk about 360 calories per 100 grams. The various condiments greatly enrich the pasta, influencing its caloric and nutritional values; if added respecting the rules of healthy eating Italian, help to make it a complete and balanced dish.
