What is Seitan?
Seitan is a food product derived from wheat; in particular, it is a vegetable protein concentrate (gluten), an alternative to traditional protein sources of animal origin.
Not surprisingly, the name seitan - coined by the macrobiotic George Oshawa in 1961 - translated from Japanese means "it is protein".
Preparation
Also nicknamed "wheat meat" (or gluten meat), seitan is obtained by extracting gluten from wheat flour (preferably from semolina), then - according to the traditional recipe - by kneading and boiling everything in water, flavored with soy, kombu seaweed, ginger and salt.
